My friend, Claire, emailed me last week with this buttermilk pie recipe that she found in the Dallas Morning News.  The recipe was written by Jane Jarrell, and it is a masterpiece.

Seriously, this is the best peach buttermilk pie I’ve ever tasted and it would work with blueberries, raspberries – the possibilities are endless.

I cheated and used a couple of Pillsbury prepared pie sheets out of a box so it didn’t even take much time.

Just be sure that your peaches are super ripe since you puree most of the fruit and you don’t want chunks in your puree!

Enjoy!

Ingredients
  1. 1 pkg. Pillsbury Pie Crust (2 sheets)
  2. 5 ripe peaches peeled
  3. 1/4 cup butter softened
  4. 1 1/2 cup plus 1/8 cup sugar (divided use)
  5. 3 tbsp. flour
  6. 3 eggs
  7. 1/2 cup buttermilk
  8. 1 tsp. vanilla
Instructions
  1. Preheat oven to 400 degrees. Place one pie crust in the bottom of a pie plate. Chop 2 peaches and place them on top of bottom crust.
  2. Puree the rest of the peaches. Set aside.
  3. Cream the butter and sugar. Add flour, mix well. Add eggs, beat until blended. Add the buttermilk, peach puree and vanilla. Blend well.
  4. Pour over the peaches in the pie plate. Top with the remaining crust. Recipe calls for a lattice topping and that's what I did. Just slice the top crust in 3/4" strips and weave the strips to create the lattice. Seal the edges.
  5. Sprinkle the remaining 1/8 cup sugar over the top.
  6. Place on a baking sheet and place in the oven. Bake at 400 degrees for 5 minute only. Reduce temperature to 350 degrees after 5 minutes and cook for an additional 55 minutes.

    Hello,
This pie looks so delicious. Have you ever used canned peaches. If you ever have what amount did you use? Also what size peaches, large, medium?

    Thanks
    Kathy

No, I haven’t used canned for this recipe and I don’t think I would just because the other ingredients would have to be adjusted far too much. However, you COULD go with frozen peaches when out of season and I bet it would turn out just fine. I always make this in the summer when I can pick up peaches at my farmer’s market so the fruit is on the medium to large side but my guess on amount if using frozen peaches would be approximately 3 to 3 1/2 cups. It won’t hurt your pie if you’re a little generous on the peaches!

I had a buttermilk peach pie recipe that was really good. It was kind of a custard pie consistency. But I lost the recipe! It had no top crust. I had planned to make it this weekend for a high auction with just a few decorative maple leaf pie crust cutouts. Your picture looks a little more runny like traditional peach pie. Can you tell me the consistency?

This pie has a more traditional peach pie consistency Beth, I know what an old fashioned buttermilk pie is like and it definitely has a custard filling – this isn’t it. But it is more thickened, less soupy than some peach pie recipes which is why I like it so you might try it anyway!
