Jami’s Salad Dressing Cake

Print Friendly

My friend Jami grew up Kansas eating the same kind of food that my mother prepared for us. When she mentioned her own mother’s “Salad Dressing Cake” I had a flashback of this wonderfully moist chocolate cake that we used to have when I was a  little girl.  This recipe is totally vintage and further proof that, yes Dorothy, there IS a place in the world for Miracle Whip!!! But I already knew that. I also grated a little semi-sweet chocolate over the top simply because I was feeling fancy today. :)

Ingredients for cake:

2 cups flour
1 1/2 cups sugar
3 tablespoons cocoa powder
pinch of salt
1 cup Miracle Whip
2 teaspoons baking soda
1 cup water
1 teaspoon vanilla

Mix all ingredients well (about 2 minutes) and pour into 2 greased and floured cake pans.
Bake at 350 degrees for about 35 minutes.

Ingredients for frosting:

3/4 cup sugar
1/4 tsp. cream of tartar
1 unbeaten egg white
1/4 cup boiling water

Instructions for frosting:

Put everything except the water into a mixing bowl and blend. Turn up the speed and gradually add the boiling water. Beat until the frosting forms stiff peaks.
