My friend Jami grew up Kansas eating the same kind of food that my mother prepared for us. When she mentioned her own mother’s “Salad Dressing Cake” I had a flashback of this wonderfully moist chocolate cake that we used to have when I was a little girl. This recipe is totally vintage and further proof that, yes Dorothy, there IS a place in the world for Miracle Whip!!! But I already knew that. I also grated a little semi-sweet chocolate over the top simply because I was feeling fancy today.

Ingredients for cake:
2 cups flour
1 1/2 cups sugar
3 tablespoons cocoa powder
pinch of salt
1 cup Miracle Whip
2 teaspoons baking soda
1 cup water
1 teaspoon vanilla
Instructions:
Ingredients for frosting:
3/4 cup sugar
1/4 tsp. cream of tartar
1 unbeaten egg white
1/4 cup boiling water
Put everything except the water into a mixing bowl and blend. Turn up the speed and gradually add the boiling water. Beat until the frosting forms stiff peaks.
