I was feeling the urge for meat loaf this week. Is there anything better than a meat loaf sandwich for lunch the next day? But then I remembered that I’ve been trying to lighten things up a bit so I dug out an old recipe for “Skinny Meatloaf” that my sister sent to me years ago. I made some additions to the original and then I had a guilt free dinner that tasted better than ever. If you’re a meat loaf lover, ENJOY!
Ingredients:
1 lb. ground round (98% lean)
1 lb. link of Butterball Smoked Turkey Sausage
1/2 cup panko bread crumbs
2 egg whites
1/2 onion finely chopped
1 8 oz. can tomato sauce
2 TBSP. brown sugar
1/2 package McCormick Meat Loaf Seasoning Mix
Worcestershire
1 tsp. salt
1/2 tsp. pepper
Instructions:
Put the beef into a large bowl.
Chop the onion and the smoked sausage and put into a food processor, blend until smooth.
Add the sausage and onion mixture to the beef.
Pour 1/2 can of tomato sauce, the bread crumbs, McCormick seasoning, egg whites, salt and pepper. Mix well.
Put into a well greased loaf pan. Bake at 350 degrees for 45 minutes.
Blend the rest of the tomato sauce, brown sugar and a couple of splashes of worcestershire sauce and brush over the top of the meat loaf.
Return to the oven for another 30 minutes.
