Frito Pie

I’ve decided that I really make chili just so I can use the leftovers for Frito Pie. I love everything about it. It’s spicy, it has crunch and there’s something very satisfying when you sit down with a big bowl of all your favorite flavors packed into one simple dish. Make my Mom’s Quick Fix Chili and you can have Frito Pie ready to go in under an hour.

Ingredients:

1 batch of Mom’s Quick Fix Chili (under Main Courses & Mom’s Favorites)
1 bag of regular Frito’s
shredded cheddar or Mexican blend cheese
sour cream
chopped onion
sliced and pickled jalapeno peppers

Instructions:

Make a batch of Mom’s Chili, allow 45 minutes to prepare.  I use the regular V8 juice when I know I’m making Frito Pie because I want to be able to spice it up with some jalapeno peppers.

Use oven proof bowls and fill the bottoms with the frito’s. Top with cheese and put the bowls on a baking sheet and under the broiler for just a few minutes to melt the cheese. Top with a little chopped onion, sour cream and jalapeno peppers.
