My friend Melissa and I share a mutual love of Midwestern food – she was born and raised in Oklahoma like my Mom. There’s so much commonality with people who grew up eating the same kind of food that you did so I always trust her when she recommends a recipe. She came up with this one on her own and like most sweet potato recipes it’s simple and calls for few ingredients but it’s the technique that makes it a great recipe. This one is all about lightly browning the potatoes in butter until they’re cooked but still firm. The topping is sparse, not super sweet. I tried it before posting this weekend and she nailed it.
Ingredients:
3-4 Sweet potatoes sliced
1 stick butter
1/2 cup brown sugar
marshmallows
Instructions:
Melt the butter in a cast iron skillet and cook the sweet potatoes until lightly browned.
Layer in a greased baking dish, top with brown sugar and dot with a few more pats of butter. Add marshmallows over the top sparingly.
Bake at 325 degrees for 30 minutes.
Servings: 6
