Holly’s Mexican Breakfast Casserole

 My friend Holly is an excellent cook and anything at her house is always a treat! And, she knew my mother very, very well since we grew up together in Wichita, Kansas. I love this one for brunch, she serves it with salsa, fruit salad and something sweet. It makes a beautiful presentation and is the perfect twist to the more standard brunch casseroles.

Ingredients:

1 dozen eggs
1 cup flour
1 tsp. baking powder
1 pint cottage cheese
1 lb shredded monterey jack cheese
1/2 cup butter
2 4 oz. cans green chilies

Instructions:

Combine all of your ingredients, put into a well greased 9×13 baking dish, cook at 350 degrees for 35-45 minutes.

Servings: 6-8
